Mocha Truffles

Indulge in chocolaty coffee goodness with these decadent Mocha Truffles. We suggest trying Resurrection Blend ® Coffee for the ultimate festive experience. 

Ingredients for Truffles

1 24oz Bag of semi-sweet chocolate chips
8 oz Cream cheese, softened
3 tablespoons ground Resurrection Blend® Coffee
2 tablespoons strongly brewed coffee

Ingredients for Coating

6 oz Semi-sweet chocolate chips
1 tablespoon Shortening

Instructions 

Line a baking sheet with waxed paper. In the microwave, melt 24 oz. chocolate chips in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting (1 to 3 minutes total time). Mix cream cheese, ground coffee, and brewed coffee into melted chocolate until smooth. 

Chill chocolate mixture until firm enough to shape, about 30 minutes. Shape ­chocolate mixture into 1-inch balls and place on prepared baking sheet. Chill truffles until firm, at least 1 to 2 hours. 

In the microwave, melt 6 oz. chocolate chips and shortening in a microwave-safe glass or ceramic bowl in 30 second intervals, stirring after each melting (1 to 3 minutes total time). Dip truffles in the melted chocolate mixture and return to waxed paper.
Set aside until firm, at least 30 minutes.
